2 tablespoons butter
1 medium yellow onion, diced
1 butternut squash (approx. 2 lbs) peeled, seeded and chopped into 1 inch cubes
2 large apples peeled, seeded and chopped into 1 inch cubes
1/4 cup apple juice
4 cups vegetable stock (plus 1 cup for thinning the soup)
